Chicken Chintamani

Non veg Recipe /Chicken Chintamani


Ingredients:-

Chicken pieces-500 gms

Shallots/ small onion or big onion-250 gms

Red chillies-125 gms

Oil -4tbsp

Salt - to taste

Soya sauce-1tsp

Curry leaves-few

Method:-

* Clean the chicken pieces.

* Heat a pan, add sesame oil, curry leaves pop it .

* Add shallots/ small onion or big onion.
Onion to be used is half the amount of chicken.

* Break the red chillies and deseed them.( Adjust red chillies if you do not want it to be too spicy, reduce little bit.)

* Fry onions and red chillies together until onions turn pink and starts brown,fry in between so that red chillies don't get burnt.

* It takes 5-10 minutes on high flame.

* Add chicken pieces- mix well and fry for a couple of minutes.

* Add salt and Soya sauce.- mix well.

* When it starts to release water,close and let it cook in simmer, until chicken is done.

* It may take 20-30 minutes.slow cooking helps in exotic flavour of onions and Chillies to infuse with chicken.

* Serve hot with Sambar or Rasam .
