Brinjal fry / Egg plant coins

 Brinjal Fry / Eggplant Coins :- 


Ingredients:- 

Brinjal - 3 no's ( Large size ) 

Turmeric powder- 1/2 tsp 

Chilli powder- 1 tsp 

Cumin powder-1tsp 

Pepper powder -1tsp 

Salt - to taste

Rice flour- 2tbsp 

Soya sauce- 2tbsp 

Big onion - 1 ( sliced ) 

Oil- 2tbsp 


How to prepare brinjal coins:- 


1. Cut the brinjal (or) egg plant in to disks (circular shape) and apply all spices.
( Turmeric powder, chilli powder, cumin powder, pepper powder,salt & rice flour) 

2. Mix well.


3. Add Soya sauce, apply the powder on both sides to  - (1/2  inch thickness ) 

4. Heat oil in a tawa and place the coated brinjal pieces and shallow fry, about 3-4 minutes on each side until its brown.

5. Flip and fry the other side for 2-3 minutes.

6. They may look lightly soft on the inside, but the outer layer will be lightly crisp.

7.Garnish with sliced onion and coriander leaves.

8. Switch off , and serve as a side for Sambar ,Rasam (or) Curd Rice.
