Mango Spongy Cake:-
Ingredients:-
Mango pulp-3/4 cup
All purpose flour-1cup
Powdered sugar-1 cup
Vegetable Oil -1/3 cup
Milk-5tbsp
Baking powder-1tsp
Baking soda-1/2 tsp
Salt -a pinch
Vennila extract-1tsp
Or cardamon powder-1 tsp
How to make Mango Spongy Cake:-
* Peel the skin of the Mango and scoop of the flesh alone.To a blender,add the mango pieces blend well.
* To a mixing bowl,place a sieve then add the flour and baking powder.
*Now add the baking soda and salt ,sieve it once.
* To a sieve dry ingredients.Pour the mango pulp and oil -mix well.
* Add milk & vennila extract.fold it gently and ensure there are no lumps or air pocket in the batter.
* By the mean time, pre heat the oven for 10 minutes at 180°c ,then brush a baking tray with oil and dust little flour all over (or) line it with a butter sheet.
* Transfer the batter to the baking tray ,then level it with a ladle/ spatula and shake the pan thrice,so that the bubbles release.
* Place the tray in a pre heated oven & bake it for 35-40 minutes at 180°c or a tooth pick inserted in the centre comes clean.* once cooled,invert the tray on a plate & gently tap to remove the cake.* Enjoy this Mango Spongy Cake.
